Banana Coconut Cookies

These cookies are perfect for very young kids. The batter is safe to eat, there is no added sugar at all, only whole banana, and they are nut-free.

Banana Coconut Cookies

An easy three ingredient recipe using only whole banana to sweeten – no added sugar!

Ingredients
  

  • 2 spotty bananas
  • 1 1/2 cups desiccated coconut
  • 2 tbsp coconut flour

Instructions
 

  • Preheat the oven to 160°C
  • In a large bowl, mash the banana as much as possible. Stir in the coconut and coconut flour until a dough forms.
  • Line a baking tray with baking paper. Shape into 10 or so cookies and place on the tray. Bake for 30 minutes or until edges are nicely golden. Leave to cool completely before removing from the tray. Store in an airtight container. These are fine at room temperature for a day or two, but after that, store in the fridge.
