Honey, Cinnamon, Date & Spelt Muffins

Wholesome Swaps And Additions In This Recipe
- Spelt flour in place of plain flour. Spelt is an ancient type of wheat and wholemeal spelt flour contains the whole grain, as opposed to the refined wheat version.
- Greek yoghurt and nuts offer some protein in this recipe, which can be hard to achieve for some children’s tastes.
- Honey and dates are a natural sweetener here, in place of refined sugar. With the addition of yoghurt, olive oil, nuts and spelt in this recipe, providing fat, protein and fibre, this helps to reduce the spike of sugar. Even though they are from natural sources, honey and dates still contain sugar.
Honey, Cinnamon, Date & Spelt Muffins
Ingredients
- 1 ½ cups wholemeal spelt flour
- ¾ cup almond meal, blanched
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- ⅓ cup honey
- 1 tsp vanilla extract
- 1 cup Greek yoghurt, full fat
- 1 egg
- ½ cup olive oil, light
- 10 dates, any kind
- 1/2 cup pecans
Instructions
- Preheat the oven to 180°C and grease a muffin tin with olive oil, or line with muffin liners
- In a large bowl, combine the flour, almond meal, baking powder, baking soda, salt and cinnamon. Whisk together until no lumps remain.
- In another bowl combine the honey, vanilla, yoghurt, egg and olive oil.
- Mix the dry ingredients into the wet and fold to combine, ensuring not to overmix.
- Stir in the dates and pecans. Spoon mixture into the prepared muffin tin. Bake in the oven for 20 minutes. Allow to cool in the tin for 15 minutes then turn out onto a wire rack to cool completely.

You can use any add ins for this recipe! Any dried fruit, even chocolate chips.
