Peanut Butter Lover Cookies
Ingredients
- 1 1/2 cups blanched almond meal
- 1 tsp baking powder
- 1/2 cup peanut butter, smooth
- 1/4 cup maple syrup, pure
Instructions
- Preheat the oven to 180C and line a baking tray with baking paper.
- Place the almond meal and baking powder in a large bowl and whisk to disperse.1 1/2 cups blanched almond meal, 1 tsp baking powder
- Add in the peanut butter and maple syrup and stir with a wooden spoon to combine. You may want to finish mixing with your hands.1/2 cup peanut butter, smooth, 1/4 cup maple syrup, pure
- Roll a tablespoon of dough into a thick cookie and continue until all the dough is used up. Flatten all the balls slightly into a cookie shape with your hands.
- Bake for 8 to 10 minutes, watching carefully to ensure they don't burn. If they are starting to brown too much. Place a sheet of foil over the top. Leave to cool completely before enjoying.
Notes
- These cookies don’t spread much, so you can shape them into your desired shape and thickness. Thicker is better for this recipe.
- You can use honey or rice malt syrup in place of maple syrup in this recipe.
